How is salt made? - From seawater to salt crystal
The story of salt begins with its origin: water from the Oosterschelde estuary. This is pumped at high tide from the waters near Bruinisse where the water is extra purified by mussels and oyster beds. Then the water is extra filtered for microplastics and other impurities without the sea salt losing its natural mineral content. Then they start evaporating the seawater. The salt water is placed in smaller, open salt pans. Here they then heat the water through a unique process until the salt crystals: in the form of pyramids that can form upside down on the surface of the water. This stage is the true craft of salt making. With the knowledge and experience of harvesting the salt by hand, they know exactly when the flakes have the right taste and texture.
