Here's how to make it

Preheat your oven to 210°C. Toss the smoked chipotle rub, tomato paste, lime juice, honey, 2 garlic cloves, and salt into a blender and whiz it all up until it's nice and smooth. Coat your cauliflower florets with this yummy sauce, then spread them out on a baking sheet. Don't forget to sprinkle those red onion rings over everything!

Bake for 18 to 20 minutes, or until the cauliflower is tender and nicely roasted. Give the cauliflower a flip every now and then for even cooking.

While that's going on, drain the black beans but make sure to save the liquid. Pop the black beans into a pan and fry them over high heat for 3 minutes. Toss in 2 cloves of garlic and fry for another minute. Now, add the reserved liquid, 2 tsp of Ancho chili powder, 1 tsp of cumin, and 1 tsp of smoked paprika powder. Grab your blender or immersion blender and mix until you've got a super smooth bean puree. If it's too thick, just add a little extra water. Give it a taste and feel free to add more chili powder, pepper, and salt to get it just right!

Warm up your corn tortillas according to the package instructions. Spread a layer of bean puree on each, then pile on the roasted cauliflower. Finish them off with your favorite toppings like green jalapeño, avocado, feta, lime, sour cream, and cilantro!

  • 2 tbsp honey
  • 4 cloves of garlic
  • 0.5 tsp salt
  • 1 small cauliflower, chopped into small florets
  • 1 red onion, sliced into rings
  • 1 can black beans (400g)
  • 1 tsp cumin and
  • 1 tsp smoked paprika
