Here's how to make it

Cut the Aji Amarillo peppers in half and remove the ribs and seeds. Finely chop the ginger.

Boil the peppers in water for 5-10 minutes. Let the peppers cool, then remove the skin from the Aji Amarillos.

Purée the peppers and ginger with a few tablespoons of oil until you have a smooth but firm sauce. Add a little pepper and salt to taste. Pour the sauce into a clean glass bottle (like a sauce bottle) and twist on the lid. Place the bottle upside down to create a vacuum seal, ensuring it's perfectly closed. Let the sauce cool and store it in the fridge.

Shelf life

Once you've opened the sauce bottle, it has a limited shelf life, about 3 weeks.
