Indian cuisine

India is famous for its diverse and flavorful cuisine. It's a huge country with tons of people, so the food really varies a lot by region, each with its own local traditions. Indian cooking is known for using aromatic spices, herbs, and different kinds of veggies, meats, and grains.

Indian cuisine is heavily influenced by various ethnic, social, and religious groups. For example, the Muslim population doesn't eat pork, and Hindus in certain areas avoid beef. This explains why vegetarianism is so common in India. There are lots of tasty vegetarian dishes like chana masala, made with chickpeas in a spicy tomato-based sauce. And palak paneer, a dish with spinach and paneer cheese.

Different Regions

India is a huge country with diverse culinary traditions and specialties. Each region has its own unique flavors, ingredients, and cooking techniques. Here's a quick overview of the main regional cuisines in India:

North Indian Cuisine
When India gained independence, it was mainly people from the Northern provinces who came to Europe. What's often seen as 'Indian' here in the Netherlands is actually more a reflection of North Indian cuisine. For example, they use a lot of dairy products like ghee, paneer, and yogurt. And North Indians generally prefer wheat, flour, and grains. They use these to make tandoori roti, naan, rumali roti, and paratha, which are eaten for breakfast and dinner. It's also known for its rich and flavorful meat dishes like Tandoori chicken and Butter chicken.

South Indian Cuisine
South Indian cuisine is mainly vegetarian. Key ingredients include coconuts, curry leaves, and tamarind. It's also a cuisine packed with spicy and aromatic flavors. While many types of bread are served with dishes in the north, rice is the base for many dishes in the south. Think dosa (a pancake-like dish made from lentils and rice), Idlis (steamed rice cakes), and appams (a pancake-like dish made from fermented rice batter and coconut milk). Another popular dish is vada (fried savory donuts made from lentil flour).

East Indian Cuisine
East Indian cuisine features a lot of fish dishes, thanks to its coastal location and many rivers. Freshwater fish like shrimp, salmon, hilsa, and carp are especially popular. Other key ingredients include mustard oil, fenugreek, and rice. Popular dishes are machher jhol (fish curry) and chingri malai curry (shrimp curry made with coconut milk).

West Indian Cuisine
This cuisine is heavily influenced by the food from Gujarat, India's fourth-largest state. Many people there follow a vegetarian diet. That's why veggies like potatoes and lentils are often the main part of a meal. Popular dishes include dhal (a lentil dish), thepla (spiced flatbread made with fresh fenugreek 'methi' leaves and whole wheat flour), and dhokla (a savory steamed cake made from chickpea flour). However, in Goa, a small coastal region in the west, you'll find lots of fish and seafood being eaten. You can still see many Portuguese influences there, dating back to the age of discovery. The Portuguese introduced red chili peppers, beef, and pork. A famous dish is Vindaloo, a flavorful curry packed with peppers. 

Central Indian Cuisine
Central Indian cuisine has been influenced by the Mughal Empire and features dishes like biryanis (a fragrant and spicy rice dish) and various types of kebabs. This cuisine is also known for using millet, a grain widely grown in the region.

Northeast Indian Cuisine
This cuisine is influenced by neighboring countries like China, Bhutan, Myanmar, and Bangladesh. That's because it's located even further east, making it a bit distinct from the rest of India. Compared to other parts of India, a relatively large amount of meat and fish is eaten here. You'll see Chinese influence in noodles, dumplings, and fermented foods like bamboo shoots. Near the Myanmar border, you'll find the Nagaland region, home to the Naga Jolokia pepper, one of the hottest chili peppers in the world. Popular dishes from Northeast Indian cuisine include momos (steamed dumplings filled with meat or vegetables) and thukpa (a hearty noodle soup).

Chili Peppers

Chili peppers are super important in Indian cuisine, used in all sorts of dishes to add a kick and flavor. There's a huge variety of chili peppers, from mild to super hot kinds. In Indian cooking, chili peppers are often used to balance out the flavors of other ingredients in a dish, like the sweetness of coconut milk or the richness of ghee. They're also good for you because peppers contain capsaicin, which has been shown to have anti-inflammatory and antioxidant effects.

One of the most common chili peppers in Indian cuisine is the green chili pepper, used both fresh and dried. Green chili peppers are often added to curries, stews, and chutneys, and they're also great for pickling and in meat marinades. Red chili peppers also come in various forms, like dried whole peppers, chili powder, or chili flakes. You'll often find them in spice blends like garam masala, as well as in meat dishes and vegetable stir-fries.

Another important chili pepper is the Kashmiri pepper. This is a mild chili pepper often used in Indian cuisine for its vibrant red color, gentle heat, and unique fruity and slightly smoky flavor. It's named after the Kashmir region in North India, where it's traditionally grown. They're elongated and have wrinkled, glossy skin. They're usually dried and ground into a fine powder, which is then used as a flavoring and coloring agent in various dishes, especially in Kashmiri cuisine.

The Naga Jolokia, also known as bhut jolokia or ghost pepper, also comes from India and is one of the hottest chili peppers in the world. Because of its intense heat, it's used sparingly, if at all, in dishes and is truly for those who love super spicy food.

Curry

One of the most popular dishes in Indian cuisine is curry, a spiced sauce usually served with rice or bread. There are tons of different curries, each with its own unique blend of spices and ingredients.
 
Curry Leaves
Curry leaves, also known as kerrieblaadjes, Karipatta, Sweet neem leaves, or Daun Kari in Indonesian, are a super important ingredient in Indian cuisine, especially in the south and west of the country. They have an aromatic scent with lots of warm notes and are essential in many Indian and Sri Lankan dishes for that authentic flavor. The leaves release their full aroma when fried and steeped in oil, and they're rarely used as a raw garnish because they can become bitter and tough.
 
Curry leaves are perfect for making curries, but despite the name, they actually have nothing to do with curry powder. That's a mix of all sorts of spices like cumin, coriander, and fenugreek. 
 
Besides their culinary uses, curry leaves are also known for their health benefits. They're packed with antioxidants and have anti-inflammatory properties, and they're thought to help regulate blood sugar levels and aid digestion.

Drinks

One of the most popular drinks in India is chai, a blend of tea, milk, and spices like ginger, cardamom, cinnamon, and cloves. Chai is often enjoyed in the mornings and evenings and is a social drink that brings people together.

Another popular Indian drink is lassi, a refreshing yogurt-based beverage. It comes in various flavors like mango, rose, and mint, and is often enjoyed as a cooling drink during the hot summer months.

Thandai is a traditional Indian drink often enjoyed during the Holi festival. It's made by blending milk, almonds, fennel seeds, and cardamom, resulting in a sweet and flavorful drink served chilled.

Besides these traditional drinks, India also offers various fruit juices and alcoholic beverages. Coconut water is a popular drink in South India, while bhang is a cannabis-infused drink enjoyed during the Holi festival.
