Here's how to make it

Slice the lemongrass into thin rings, peel the garlic, shallot, and ginger, and chop them into small pieces.

Blend all the ingredients in a food processor until it reaches your desired consistency (about 2-3 minutes). If the curry paste is too dry, just add a little extra lime juice, water, or a spoonful of oil. Spoon the curry paste into a clean jar, or check out our tip.

Tip

You can store the curry paste in the freezer, so you'll have it ready for multiple curry dishes. Try freezing the curry paste in an ice cube tray; this makes it super easy to portion out and grab just what you need from the freezer.

Shelf life

Keep the curry paste in the fridge, and it'll stay good for about 2-3 weeks, but it might last even longer if it still looks, smells, and tastes fine. Always using a clean spoon will help it last longer. You can also pour a thin layer of oil over the top of the curry paste after you've scooped some out.

Ingredients

4 green pieces
  • 1 stalk lemongrass
  • about 5cm ginger
  • 2 shallots
  • 2 cloves of garlic
  • 2 tsp ground cumin
  • zest and juice of 1 lime
  • pinch of salt
  • a splash of olive oil
  • optional: fresh cilantro
