Tomato Sambal Westlandpeppers

Here's how to make it

Wash the peppers and cherry tomatoes, then remove the stems from the peppers. If you want a less spicy sambal, take out the seeds.

Whizz up all the ingredients in a blender or with a hand blender. Quickly fry the sambal in a wok or pan with a good splash of oil. Keep it on high heat for 3 minutes, stirring all the time. Then, turn the heat down low and let it gently simmer for another 20 minutes.

Pop the sambal into a clean jar and screw on the lid. Turn the jar upside down to create a vacuum seal, making sure it's perfectly closed. Let the sambal cool down, then store it in the fridge.

Shelf life

Once you've opened a jar of sambal, it won't last forever. Always using a clean spoon will help it last longer. You can also pour a thin layer of oil on top of the sambal after each use.
