Here's how to make it

Preheat the oven to 210° degrees. Put the smoked chipolte rub, tomato paste, lime juice, honey, 2 cloves of garlic and salt in a blender and blend until smooth. Marinate the cauliflower pieces with the sauce and place on a baking sheet. Sprinkle the red onion rings on top.

Place in the oven for 18 to 20 minutes. Until the cauliflower is tender and toasted. Turn the cauliflower occasionally.

Meanwhile, drain the black beans and collect the liquid. Put the black beans in a pan and fry on high heat for 3 minutes. Add 2 cloves of garlic and fry for another 1 minute. Add the collected liquid, 2tl Ancho chili powder, 1tl cumin and 1tl smoked paprika. Blend with a blender or hand blender to a smooth bean puree. Add additional water if necessary if the bean puree is too thick. Taste and season further with more chili powder, pepper and salt if necessary

Warm the corn tortillas as directed on the package. Spread them with a layer of bean puree and then with the roasted cauliflower, finish with your favorite toppings such as; green Jalapeño, avocado, feta, lime, sour cream and cilantro.

  • 70g tomato paste
  • juice of 2 limes
  • 2 tbsp. honey
  • 4 cloves of garlic
  • 0.5 tsp salt
  • 1 small cauliflower, in small pieces/florets
  • 1 red onion in rings
  • 1 can of black beans (400g)
  • 1 tsp cumin and
  • 1 tsp smoked paprika

Toppings
