Here's how to make it

Order the red or yellow Sambal package with the Westlandpeppers products: 250g red or yellow chilies, 3 rawit chilies or madame jeanette chilies and 2 cloves of garlic.

Remove the stalks from the peppers and grind them along with the onion and garlic in a blender or with a hand blender.

After this, add the sugar, vinegar, soy sauce manis and lime juice and grind again.

Fry the sambal in a wok or skillet with a generous splash of oil. Leave on high heat for 5 minutes and keep stirring.

Put the sambal in a clean jar, twist the lid on. Place the jar upside down so that it vacuums and is perfectly sealed. Let the sambal cool and store in the refrigerator.

Tip

Want to give the sambal extra spice? Then leave the seeds in the chilies. Sambal just less hot? Then take out seeds and add a tomato.

Shelf life

Once you open the jar of sambal, it has a limited shelf life. If you always use a clean spoon you extend the shelf life. Also, you can always pour a small layer of oil on top of the sambal after you scoop out some.

  • olive oil
