Here's how to make it

Cut the Aji Amarillo peppers in half and remove the seeds and seeds. Finely chop the ginger.

Boil the peppers in water for 5/10 minutes. Let the peppers cool and remove the skin from the Aji Amarillo's.

Puree the chilies and ginger with a few tablespoons of oil to make a smooth but firm sauce. Add a little pepper and salt to taste. Put the sauce in a clean glass (sauce) bottle, twist on the lid. Place the bottle upside down so that it vacuums and is perfectly sealed. Let the sauce cool and store in the refrigerator.

Shelf life

Once you open the sauce bottle, it has a limited shelf life, about 3 weeks.
