Here's how to make it

Heat olive oil in a pan. Add the corn kernels, season with salt, give them a flip or two, and cook without stirring until lightly browned on one side, about 2 minutes. Stir the corn and repeat until the second side is lightly browned, about 2 minutes. Keep stirring until the corn is browned on all sides, about 10 minutes in total. Transfer the corn to a large bowl.

Add the mayonnaise, sugar, feta, spring onions, sliced or finely chopped jalapeño, garlic, lime juice, and Ancho chili powder to the still-warm corn and mix everything together. Taste and add more salt, pepper, and chili powder to your liking.

  • 600g canned corn kernels
  • 1 clove garlic, finely chopped
  • 3 spring onions, sliced
  • 3 tbsp mayo
  • 100g feta, crumbled
  • juice of 1 lime
  • 1 tbsp sugar
  • salt and pepper
  • olive oil
