With cold weather, it is delicious to make a home-made soup. A good idea is this red pepper soup, which is not only very tasty, but also super healthy. You can use this to give your immune system a real boost and to stay warm on cold days! Delicious fresh red peppers give the soup a spicy flavour. The real fans of spicy food can replace the red pepper with a hotter one, such as Rawit or Habanero.

Ingredients

  • 1 litre vegetable stock
  • 4 tomatoes
  • 1 bell pepper
  • 1 onion
  • 5 red peppers
  • 2 tbsp tomato puree
  • 2 cloves of garlic
  • 2 tbsp paprika
  • 2 tbsp sugar
  • salt
  • olive oil

This is how you make it

Cut the onion into rings. Remove the hard pieces from the tomatoes and cut them into quarters. Remove the seeds from the peppers and chillies and cut them into chunks. For an extra spicy red pepper soup, cut the chillies with seeds into chunks.  Fry the onion, garlic and peppers with a little olive oil in a soup pan. Then add the tomatoes and peppers, let it simmer until it has become a soft mixture. Add the tomato puree and cook for 2 minutes. Then add the vegetable stock with the paprika and sugar. Leave to simmer (do not boil) for a further 30 minutes over a gentle heat. Purée the soup with a blender or hand blender and, if necessary, sieve the soup to remove seeds and skin. Add salt and possibly other herbs to taste. And ready is the delicious home-made red pepper soup, enjoy!
