Description
The Aji Amarillo is a South American pepper, which is especially popular in Peru and Bolivia. The Aji peppers are the edible gold of Peru and have a spicy, fruity, colourful and creamy taste. In Peruvian cuisine, the Aji Amarillo, together with red onion and garlic, is part of the ‘holy trinity’ and the basis of many dishes. The pepper is medium hot and is best known for its delicious fruity aromas, reminiscent of a peach. This makes the pepper delicious in cheviche, salsa verde or sauces.
Amarillo is the Spanish word for yellow, yet the pepper is really orange in colour. This is because the Aji Amarillo Paste, which is made from the fruity orange pepper, is yellow of colour. This is a good way of checking whether the paste is pure; if it is orange, extra ingredients or flavour enhancers have been added.
Storage & shelf life
It is best to store the fresh chillies in the refrigerator or in a cool dark place in a pantry, cellar cabinet, barn etc. The ideal temperature is between 10 °C and 13 °C, then the chillies stay the longest good, about 7 to 14 days. Country of origin
During the summer season (April-November) this product is grown in our own greenhouses in the Netherlands. In the winter season (November-April) this product is very limited available and is grown in Spain by our regular grower.
