How is the salt made? – from seawater to salt crystal
The story of the salt begins at its source: the water from the Oosterschelde. This water is pumped in at high tide from the waters near Bruinisse, where it's naturally purified by mussels and oyster beds. Then, the water is further filtered for microplastics and other impurities, all without losing the sea salt's natural mineral content. After that, they start evaporating the seawater. The salty water is placed into smaller, open salt pans. Here, they then heat the water through a unique process until salt crystals form: these can appear as upside-down pyramids on the water's surface. This stage is the true craft of salt making. Thanks to their knowledge and experience in hand-harvesting the salt, they know exactly when the flakes have just the right taste and texture.
