Here's how to make it

1
Cut the dried peppers in half and remove the seeds. Toast the Moritas for 1-2 minutes in a dry pan. Put the Moritas in a mixing bowl and cover them with boiling water. Let the chili peppers soak for 20-30 minutes. Meanwhile, roast the cherry tomatoes in the oven at 220 degrees for 20 minutes.

2
Once the chili peppers have softened, taste the soaking liquid. If you like the flavor, you can use it for the adobo sauce. If you don't like it or if it tastes bitter, you can use tap water for the adobo sauce.

3
Put the chili peppers in a blender or food processor along with the roasted tomatoes, 1 onion, 4 peeled garlic cloves, 1 teaspoon dark brown sugar, 100ml water (or soaking liquid), and all the remaining spices. Blend everything together really well.

4
Sauté the Chipotle puree in a bit of oil for 2 minutes over medium heat. Then add 3 tablespoons of apple cider vinegar and 50ml water (or soaking liquid). Mix everything well and let it simmer for 10-15 minutes, or until it has reduced to your desired thickness. Taste to check the seasoning and add more salt, sugar, or spices if needed.

5
Pour the sauce into a clean jar, then screw on the lid. Turn the jar upside down to create a vacuum seal, making sure it's perfectly sealed. Let the sauce cool down and store it in the fridge.

Shelf life

Store the sauce in the fridge, where it will keep for weeks, if not longer. Always using a clean spoon will help extend its shelf life.
