Mexican cuisine

Mexico is a country famous for its vibrant culture and rich history, and one of its most awesome features is definitely its food! Mexican cuisine is celebrated worldwide for its bold and spicy flavors, and many folks consider it to be some of the best grub on the planet.

Mexican cooking really shines with its generous use of fresh ingredients like avocados, tomatoes (or tomatillos!), cilantro, and limes, which give so many dishes a bright and super flavorful kick. Corn is a total staple, popping up in various forms in almost every dish you'll find. Plus, Mexican cuisine often features traditional indigenous ingredients and cooking techniques, truly showcasing the country's rich and diverse cultural heritage.

Mexican cuisine is a delicious and colorful reflection of the country's culture, history, and traditions. Whether you're enjoying a simple taco or a complex mole sauce, Mexican food is sure to tantalize your taste buds and leave you wanting more! 

 

Mexican vs. Tex-Mex

Mexican cuisine is often confused with Tex-Mex, which is quite well-known here in the Netherlands. But there's definitely a difference between these two types of food.

Tex-Mex cuisine is a blend of Mexican and American cooking that started in Texas, while Mexican cuisine refers to the traditional food of Mexico. Even though both cuisines share some similarities, there are also some key differences.

One of the main differences is the ingredients they use. Tex-Mex often features ingredients not found in traditional Mexican cooking, like Cheddar cheese, ground beef, and flour tortillas. On the flip side, Mexican cuisine typically uses fresh veggies, tomatillos, beans, corn tortillas, and various cheeses.

Another difference is how spicy they are. Tex-Mex is generally hotter than traditional Mexican food, often using chili powder, cumin, and other spices. Mexican cuisine, however, tends to use fresh or dried chili peppers and other herbs to boost the flavor.

When it comes to dishes, Tex-Mex includes things like chili con carne, fajitas, burritos and nachos, which aren't really typical Mexican food. Mexican cuisine, on the other hand, features dishes like tacos, tamales, mole and chiles rellenos, which you'll find less often in Tex-Mex.

While Tex-Mex definitely shares some similarities with Mexican cuisine, it really has its own unique flavors and dishes that set it apart from traditional Mexican food.

Fresh & Dried Chili Peppers

Chili peppers are a super essential ingredient in Mexican cuisine, used in all sorts of dishes to add warmth and flavor. Lots of different types of chilies are used in Mexican cooking, each with its own unique taste and level of spiciness. Both fresh and dried chili peppers bring different flavors and uses to the Mexican kitchen.

Fresh chili peppers, like jalapeños, anaheim, serranos, and habaneros, have a bright and lively flavor with a crisp texture. They're often used in salsas, guacamole, and other raw or lightly cooked dishes. You can also grill or roast fresh chilies to give dishes a smoky taste.

Dried chili peppers, on the other hand, have a deeper and more complex flavor profile than fresh ones. They're often used to make sauces like mole, enchilada sauce, and adobo, which need a richer, more concentrated taste. Some of the most common dried chili peppers in Mexican cuisine include chipotleancho, guajillo, pasilla, arbol, and cascabel.

Dried peppers often have different names than their fresh counterparts because the drying process changes their flavor and texture, and they're often used in different ways in the kitchen. For example, the fresh Jalapeño becomes the smoky, dried Chipotle pepper. And the Poblano is the fresh version of the Ancho & Mulato. While the Poblano is often roasted and stuffed with cheese or meat to make chiles rellenos, the dried version is used to create sauces like mole.

Tacos

A taco is the most classic and famous dish in Mexican cuisine. They're small, folded tortillas filled with all sorts of ingredients. And when Mexicans say 'tortilla,' they're not talking about the wheat tortillas you find in the supermarket. A real Mexican tortilla is made from corn, not to be confused with corn flour. These corn tortillas are made from nixtamalized corn. This is a process where raw corn kernels are soaked and cooked in slaked lime and water, then ground with volcanic stones to create a fresh dough.

Tacos come in all shapes and sizes, and they're prepared differently depending on the region. The holy trinity of the taco is: corn tortilla, filling, and salsa. Famous tacos include Al Pastor, Barbacoa, Birria, Carnitas & Chicken Mole, but honestly, the possibilities are endless! Feel free to experiment with different fillings and salsas.

Mole

The word Mole comes from 'mulli' in Nahuatl (an indigenous language in Mexico), which means sauce. This is the general name for Mexican sauces, but outside of Mexico, people almost always mean Mole Poblano. This is a complex sauce that can have up to 40 different ingredients, including onion, chili peppers, and a whole bunch of different spices. The most surprising ingredients are cinnamon and chocolate. Mole is often considered Mexico's national dish.

Tamales

Tamales are steamed dough packets made from corn flour, wrapped in corn husks (or banana leaves). They're a traditional dish with a filling of meat, vegetables, cheese, or (dried) fruit, often spiced up with peppers. There are about 500 different kinds of tamales in Mexico! The word 'tamalli' means something like 'wrapped up' in Nahuatl (an indigenous language in Mexico).

Drinks

One of Mexico's most iconic drinks is tequila, made from the blue agave plant and usually served neat or in cocktails like margaritas and palomas. Another popular alcoholic drink is mezcal, also made from the agave plant, but it has a smokier flavor and is typically enjoyed neat.

Non-alcoholic drinks are also a big part of Mexican cuisine. Horchata is a refreshing drink made with rice milk, cinnamon, and sugar. It's super popular in Mexico, but actually originated in Spain. Aguas frescas, or 'fresh waters,' are another popular non-alcoholic drink made from fresh fruit and water, often sweetened with sugar.

Xocolatl

What we know here as chocolate milk originally comes from Mexico, where it's called Xocolatl (Aztec chocolate). Xocolatl is a spicy, bitter chocolate drink, flavored with chili, vanilla, and cinnamon. This refreshing beverage can be enjoyed hot or cold.

The history of xocolatl goes way back! Deep in the tropical rainforests, ancient Mayan and Aztec civilizations discovered the cacao tree, harvesting its magical beans. These beans were carefully fermented, roasted, and ground into a paste, forming the base of xocolatl. The Mayans believed the cacao tree itself had a divine origin and that its fruits granted immense wisdom to those who consumed them. With the arrival of European explorers in the 15th century, xocolatl met new ideas. They added sugar and milk, transforming the bitter drink into the chocolate milk we know here in the Netherlands today.
