Here's how to make it

Rinse the peppers and dry them well. Put them in a mixing bowl, add the olive oil/sesame oil and stir.

Preheat the skillet; set a large (cast iron) skillet over medium-high heat. Let heat for about 2 minutes, or until the pan just begins to smoke.

Carefully place the Shishito peppers in a single layer in the skillet and sear for 2 to 3 minutes, or until blanched and browned. Use tongs to flip them over and fry the other side until they are also blanched, about 2 more minutes.

Place the grilled peppers on a plate or platter and season with salt and soy sauce.

Tip

Can also be prepared in the oven! Preheat the oven to 175 degrees. Drizzle the Shishto with olive oil/sesame oil and bake in the oven for about 10-15 minutes. The peppers are done when they are soft with a bit of a brown color. Finish with sea salt and drizzle with soy sauce to taste.
