Ingredients
- 1 liter vegetable broth
- 4 tomatoes
- 1 bell pepper
- 1 onion
- 5 red peppers
- 2 tbsp tomato paste
- 2 cloves of garlic
- 2 tbsp paprika
- 2 tbsp sugar
- salt
- olive oil
Here's how to make it
Slice the onion into rings. Remove the hard parts from the tomatoes and quarter them. Remove the seeds from the bell pepper and chili peppers, then cut them into large pieces. For an extra spicy red pepper soup, cut the chili peppers whole into large pieces. Sauté the onion, garlic, and chili peppers with a little olive oil in a soup pot. After that, add the tomatoes and bell pepper, and let it simmer until it becomes a soft mixture. Add the tomato paste and cook for 2 minutes. Then, add the vegetable broth with paprika powder and sugar. Let it simmer gently for another 30 minutes (don't boil). Puree the soup with a blender or immersion blender, and if you like, strain it to remove any seeds and skins. Add salt and any other herbs to taste.
