Description

The dried Rawit, also known as Thai pepper, is a small pepper with a fiery kick! It's super popular in Indonesian and Thai cooking, often used to whip up sambals and salsas, or tossed into curries and stir-fries. This dried Rawit is grown and dried right here by Westlandpeppers. It's a special Westlandpeppers variety, a bit chunkier and bigger than the Bird's Eye chilies you usually find in Asian shops, but don't worry, the flavor and heat are just as awesome!

Preparation
– First, toast the dried peppers in a dry skillet over medium heat for about 2 minutes. This helps release their essential oils and brings out more flavor. Next, rehydrate the dried peppers with hot water. Let them soak in hot water for 15-20 minutes, then slice or chop them to your desired size.
– You can also grind the dried peppers into flakes or powder.

To keep dried chili peppers fresh for a long time, store them in an airtight container in your pantry or, even better, in the freezer. Avoid exposing them to air, moisture, light, and heat, as this can cause them to discolor, mold, and lose flavor.

Dried peppers last a long time, but for the best flavor and heat, try to use them within a year. Click here for more info on storing and freezing dried chili peppers.

Morocco

We dry our Rawit peppers in a special drying room at our 's-Gravenzande location. We usually do this when we have plenty of peppers in stock, so it might not always be available for long periods.
