The Aji Panca, also known as Panca chili, is a versatile chili pepper native to Peru. The chili pepper has a mild spiciness and deep, fruity flavor. With aromas of raisins, berries and a hint of smokiness. Thanks to its rich flavor profile, the Aji Panca is widely used in traditional Peruvian dishes such as marinades, soups, sauces, stews and ceviches. The pepper is ideal for those looking for flavorful depth without overwhelming sharpness. It adds a true Peruvian flavor to all your dishes, so you can make delicious Peruvian mole or marinate meat with it.
Preparation
– First, toast the dried peppers in a dry skillet over medium heat for about 2 minutes. This helps release their essential oils and brings out more flavor. Next, rehydrate the dried peppers with hot water. Let them soak in hot water for 15-20 minutes, then slice or chop them to your desired size.
– You can also grind the dried peppers into flakes or powder.

To keep dried chili peppers fresh for a long time, store them in an airtight container in your pantry or, even better, in the freezer. Avoid exposing them to air, moisture, light, and heat, as this can cause them to discolor, mold, and lose flavor.
Dried peppers last a long time, but for the best flavor and heat, don't keep them for more than a year. Click here for more info on storing and freezing dried chili peppers.
Our Aji Panca peppers are grown in Spain. We then dry them at our 's-Gravenzande location in a special drying cell.
