Corn husks, also known as maize leaves, are widely used in Mexican and Central American cuisine. These corn leaves aren't meant to be eaten, but they're used as a wrapper to pack food in, which is then steamed or baked. They're a natural, compostable food packaging. Plus, they make for a lovely food presentation. Some leaves might be a bit spotty or unevenly colored, but this won't affect the food wrapped inside.

Corn husks are mainly used to make Tamales. These are steamed dough packets made from cornmeal wrapped in corn leaves. It's a traditional dish with a filling of meat, vegetables, cheese, or (dried) fruit, often flavored with peppers. The word 'tamalli' in Nahuatl (an indigenous language in Mexico) means something like 'wrapped up'.

The corn husks are packed in 50-gram portions (approx. 15 pieces).

Preparation
Soak the corn husks in hot water for 15 minutes. Pat the leaves a bit dry and wrap your food in them. Tie the packets with some torn husks or a string, then steam or barbecue them. After cooking, unwrap the food from the leaves and discard the husks.
