With cold weather, it is great to make a homemade soup. One idea is this red pepper soup, not only very tasty but also super healthy. This is great for giving your immune system a real boost and staying warm on cold days! With delicious fresh red peppers, the soup gets a spicy flavor. The real lovers of spicy food can replace the red pepper with a somewhat hotter pepper, such as the Rawit or Habanero.
Ingredients
- 1 liter of vegetable broth
- 4 tomatoes
- 1 bell bell pepper
- 1 onion
- 5 red peppers
- 2 tbsp tomato paste
- 2 cloves of garlic
- 2 tbsp paprika
- 2 tbsp sugar
- salt
- olive oil
Here's how to make it
Cut the onion into rings. Remove the hard pieces from the tomatoes and cut them into quarters. Remove the seeds from the bell bell pepper and peppers and cut them into coarse pieces. Roughly chop the peppers whole for an extra spicy red pepper soup. Sauté the onion, garlic and peppers with a little olive oil in a soup pan. After this, add the tomatoes and bell bell pepper, simmer until it has become a soft mixture. Add the tomato paste and cook for 2 minutes. Then add the vegetable stock with the paprika and sugar. Let this simmer on low heat for another 30 minutes (do not boil). Puree the soup with a blender or hand blender and if necessary strain the soup to remove seeds and skins. Add salt and any other spices to taste.
