A Chipotle is a dried and smoked red Jalapeño pepper. They are known for their spicy, sweet and smoky smell and taste. Because the Jalapeños are fully matured they have extra flavor and are sweeter than the fresh green Jalapeño. The word Chipotle comes from the Nahuatl (indigenous language in Mexico) and means smoked chili pepper. It is a very well known and indispensable product in Mexican cuisine.
A tasty and simple dish is smokey Chipotle mayonnaise, make your own mayonnaise or buy ready-made and add some ground Chipotle and garlic. The result is a delicious slightly spicy sweet mayonnaise. The Chipotle mayonnaise is delicious with a burger, fries or just as a dip!
Preparation
- Fry the dried chilies in a dry skillet over medium heat for about 2 minutes. This will release the essential oils and impart more flavor. Then soak the dried chilies with hot water. Soak them in hot water for 15/20 minutes and then cut/chop into desired size.
- Grind the dried chilies into flakes/flakes or powder.

Very versatile and very tasty! They have a good smoky flavor and give an excellent kick without being overpoweringly spicy. I use them myself mainly to make sauces, the smokiness is also incredibly tasty with an old-fashioned pantosti.
