Peppers come in lots of different colors, from orange to brown and you even have purple peppers, but the most common colors are still red and green. Whether you come across a bell bell pepper, regular pepper or a hotter pepper, they are often red or green. What exactly are the differences between red and green peppers?

Time

The biggest difference, which also explains the color difference, is the time the pepper is picked. peppers usually turn from green to red (or some other color). We say mostly because of course there are always exceptions, but you can say that when you see a red pepper it is the fully matured version of the green pepper. So it takes longer to pick a red pepper than a green one.

Taste

Green peppers are bitter and crunchy compared to a red pepper. This is because a red pepper hangs on the plant longer and thus has longer to become slightly sweeter, fruitier and sometimes slightly softer. This goes for all pepper/pepper varieties, the (block) bell pepper, chilli and Habanero. For spicy peppers, there is an extra twist, and that is that they get hotter. Capsaicin is the substance in peppers that makes them so spicy/hot, and the longer the pepper hangs on the plant the more capsaicin it contains. The more capsaicin, the hotter the pepper. And this means that of the same variety, red peppers are hotter than green peppers.

Healthier

Both colors of peppers are obviously very healthy, but red peppers are slightly healthier. This is because, the red pepper hangs on the plant longer and therefore has more time to produce vitamins, minerals, antioxidants and, in the case of hot peppers, capsaicin.

So when in doubt between a green or red bell bell pepper, pepper, jalapeño or something more extreme, consider these differences. If you want a sweeter/hotter flavor and healthier pepper, go for the red. If you want an optimally crunchy pepper with a slightly bitter and less hot flavor, go for the green.
