This is how you make it

Order the red or yellow Sambal package with the Westlandpeppers products: 250g red or yellow chillies, 3 rawit chillies or madame jeanette chillies and 2 cloves of garlic.

Remove the stalks from the chillies and grind them together with the onion and garlic in a blender or with a hand blender.

Then add the sugar, vinegar, ketjap manis and lime juice and grind again.

Fry the sambal in a wok or frying pan with a large splash of oil. Leave it on high heat for 5 minutes and keep stirring.

Put the sambal in a clean jar, turn the lid on. Place the jar upside down so that it pulls vacuum and is perfectly sealed. Leave the sambal to cool and store in the refrigerator.

Tip

Do you want to give the sambal extra spice? Then leave the seeds in the chillies. Sambal less hot? Then remove the seeds and add a tomato.

Shelf life

Once you have opened the jar of sambal, it has a limited shelf life. If you always use a clean spoon, you will extend the shelf life. You can also always pour a small layer of oil on top of the sambal after you have scooped some out.

Ingredients

  • 1 onion
  • 1 tbsp sugar
  • 1 tbsp vinegar
  • 1 tbsp soy sauce manis
  • juice of half a lime
  • olive oil
