Dimsum are steamed little bites. With this recipe, you make 32 Dimsum with a sweet filling of snack peppers & habanada peppers.

Directions

1Start by cleaning and removing the seeds of the snack peppers, habanadas and chilli peppers and then cut them into small pieces. Finely chop the ginger, onion and garlic.

2Heat a pan with a dash of olive oil and then add the onion, garlic, habanada and snack peppers. Put this on high heat for 5 minutes, then add the salt, sugar and vinegar. Mix everything together well and add 150 water and 3 tablespoons cornstarch and simmer for 10 minutes.

3Grind this mixture into a coarse sauce in a blender or food processor. Taste it and add salt and pepper to taste. Place the coarse sauce in the fridge for about 2 hours.

4Grab a wonton wrapper and put it in your hand. Fill the sheet with 1 large tablespoon of the filling. Close the dough sheet with a fork or your fingers. There are several videos on the internet for different ways to close the dim sums.

5Heat a small pan with water and let the water boil. Add a little salt and pepper to the water. Grab a steam basket/sieve and cover the bottom with baking paper to prevent the dim sum from sticking to the bottom and opening when removing it.

6Place the steaming basket with the dimsum on the pan and steam for about 15 minutes. Serve the appetizers with soy sauce to dip in.

Tip

1For a spicy variant, replace the habanada chillies with habaneros!

100 g orange habanada chillies

100 g shiitake mushrooms

1 red onion

1 cm ginger

1 tbsp olive oil

1 tsp salt and pepper

1 tsp sugar

2 tbsp vinegar

3 tbsp cornstarch

150 ml water

soy sauce, for dipping
