Habanada Empanadas

Empanadas are South American stuffed dough snacks. With this recipe, you make about 15 empanadas with a filling of pumpkin and habanada chillies.



For the filling

1Finely chop the garlic and red onion. Clean the pumpkin/butternut and habanada chillies and cut them into small pieces.

2Grill the pieces of pumpkin with some olive oil, salt and pepper in the oven for 20 minutes at 210 degrees Celsius.

3Fry the garlic and red onion with olive oil in a pan until golden brown and add the habanadas. Fry this for about 5 minutes on medium heat, stirring regularly. Add the cumin powder, oregano, salt and pepper to taste.

4Finally, add the grilled pumpkin and feta pieces. Leave the filling to cool in the fridge.

For the dough

1Add all the ingredients (except the milk and 1 egg for garnish) in a mixing bowl and knead this into a smooth dough. Make a ball of the dough and put it in the fridge for at least 30 minutes.

2Preheat the oven to 200 degrees.

3Take the dough out of the fridge and roll it out to a thin layer of about 2mm thick. Don't forget to sprinkle some flour on the counter so that the dough doesn't stick to the counter. Cut small circles out of the dough using a small bowl and a knife or use an empanada maker.

4Use the empanada maker to fill and fold the empanadas. No empanada maker? Then put some filling in the dough and put it on one side of the circle, fold the other side over it. Press the edges well with a fork to create a nice pattern. Or fold in a pattern of your own design, there are plenty of videos with examples and ideas. Press the edges well and don't use too much filling, otherwise, the empanadas might burst open in the oven.

5Beat the egg with the milk in small bowls and spread it on the top of the filled empanadas, this will make the empanadas nice and brown! And sprinkle some sesame seeds on top. Put the empanadas on a baking tray and place them in the oven for about 15 to 20 minutes, until they are nicely browned.

5 Habanada chillies

1 pumpkin/butternut

2 garlic cloves

1 red onion

75 g feta cheese

salt and pepper

olive oil

1 tsp cumin powder

1 tsp oregano

This is what you need for the dough

300 g flour

1 egg

100 g buter

80 ml water

1 tbsp salt

1 egg (garnish for baking)

a dash of milk (garnish for baking)

optional sesame seeds
