This is how you make it

Cut the Aji Amarillo chillies in half and remove the seeds. Finely chop the ginger.

Boil the chillies in water for 5/10 minutes. Let the chillies cool down and remove the skin from the Aji Amarillo.

Puree the chillies and ginger with a few tablespoons of oil to a smooth but firm sauce. Add a little pepper and salt to taste. Put the sauce in a clean glass (sauce) bottle, twist the lid on. Turn the bottle upside down to create a vacuum and seal it perfectly. Leave the sauce to cool and store in the fridge.

Shelf life

Once you have opened the sauce bottle, it has a limited shelf life, about 3 weeks.
