Here's how to make it

Start by cleaning and removing the seeds from the snack peppers, habanero and chili pepper, then cut them into small pieces. Finely chop the ginger, onion and garlic.

Heat a pan with a little olive oil, then add the onion, garlic, habanero and snack peppers. Put this on high heat for 5 minutes, then add the salt, sugar and vinegar. Mix everything well and add 150 water and 3 tablespoons of cornstarch and simmer gently for 10 minutes.

Grind this mixture into a coarse sauce in a blender or food processor. Taste it and add salt and pepper to taste. Place the chunky sauce in the refrigerator for about 2 hours.

Take a gyozavel and place it in your hand. Fill the sheet with 1 generous tablespoon of the filling. Fold the sheet in half and press only the center closed. Keep the fingers you will use to make the folds wet. There are several videos on the Internet for folding gyoza, for possible examples.

Heat a pan over medium-high heat with a little oil. Once the oil is hot place the gyoza in the pan and fry the gyoza until they are nicely golden brown. Add a little water to the pan (about 80 ml) and then put the lid on the pan. Now let the gyoza steam until the water is completely gone (this takes about 10 minutes). Best to do this in parts, depending on how big your pan is.

Serve the appetizers with soy sauce, for dipping.

Ingredients

  • 10 gyoza sheets
  • 100 g shiitake mushrooms
  • 1 red onion
  • 1 cm ginger
  • 1 tbsp olive oil
  • 1 tsp salt and pepper
  • 1 tsp sugar
  • 2 tbsp vinegar
  • 3 tbsp cornstarch
  • 150 ml of water
  • soy sauce, for dipping
