Put the Pimientos de Padron peppers in the grill dish or your own baking dish. Sprinkle with grated cheddar and drizzle with a little olive oil and Sriracha sauce.
Bake in the oven for about 15-20 minutes. The peppers are ready when they are soft and a bit browned. Add the nacho chips for the last 5 minutes. Finish off with a little sea salt to taste. Serve it with sour cream and extra Sriracha sauce.
