This is how you make it

Roast the red chilies and garlic cloves in a dry frying pan.

Add the oil and all other ingredients and let warm slowly over medium heat to 75 degrees (about 5 minutes). Remove from the heat and set aside for 1 day to let all the flavors infuse in the oli.

Strain the oil and store in a bottle or jar. For even longer shelf life of the oil, heat the oil again to 75 degrees after sieving and then fill the bottle warm.

Shelf life

Store the chili oil in the refrigerator, it will stay good for about 6 months.

Ingredients

  • 90ml olive oil
  • 3 cloves of garlic
  • 15g rasped ginger
  • 2 cinnamon sticks
  • 15g coriander + stalks
