Description
Sambal Le Beau Albert is a sambal made by the Niggebruge family. The sambal is made with red peppers grown by Westlandpeppers.
Albert Philippus Dominicus Niggebrugge was born in 1857 in Surabaya on Java. He was nicknamed ‘Le beau Albert’ because of his autographed appearance and his affinity for the French language at the time. The sambal that was made in Niggebrugge’s home from 1897 was so popular with the Indonesian community that it was frequently sold from home.
The recipe was handed down from generation to generation and eventually arrived in the Netherlands from Java via a grandson of Albert. This grandson prepared the sambal in his backyard until almost 100 years of age, until he passed it on to the next generations. The sambal is currently still prepared by the 4th and 5th generation Niggebrugge’s in a traditional way on petroleum sets, which brings the authentic taste to its full advantage.
