The Pasilla chili powder is a ‘single origin’ powder and consists only of dried and ground Pasilla chillies. It contains no colourings or other additives. The dried Pasilla chillies have a mildly spicy, strong and refined flavour. Pasilla’ is Spanish for ‘sultana’, because it is a dark brown, wrinkled pepper with a raisin-like aroma. The chilli has a rich smoky, earthy flavour with a hint of cocoa. The fresh variety is called Chilaca and in dried form Pasilla. The dried chillies are ground into a fine Pasilla chile powder, and this can be added to any dish.
