Description
The dried Guajillo has a strong fruity taste with a tendency to berrys/green tea. The Guajillo has a mild taste in terms of hotness compared to other dried peppers. This makes it a common seasoning for many dishes. For example, the Guajillo is an important ingredient in barbecue sauces, chorizo & mole.
In Mexican cuisine, the Guajillo, together with the Pasilla and Ancho, is part of the ‘Holy Trinity’ among dried chilli peppers. All three are used in traditional mole sauces. In addition, they are important flavours in many sauces, salsas and soups.
Preparation
– Place the dried chillies in a food processor and grind them until they have the coarse texture you prefer, flakes or powder.
– Rehydrate by soaking them in hot water for about 15 minutes, then chop as you prefer.
– Fry the dried chillies in a dry frying pan on medium heat for about 2 minutes. This will release the essential oils and give them more flavour.
Storage / shelf life
Can be stored in an airtight container for a very long time, but for optimal taste and spiciness, we advise no longer than one year. Avoid exposure to light, (sun)light will discolour the peppers and the taste will decrease.
