Description
A Chipotle is a dried and smoked red Jalapeño pepper. They are known for their spicy, sweet and smoky smell and taste. Because the Jalapeños are fully ripened they have extra flavour and are sweeter than the fresh green Jalapeño. The word Chipotle originates from Nahuatl (indigenous language in Mexico) and means smoked chilli. It is a very well-known and indispensable product in Mexican cuisine.
Chipotle mayonnaise is a tasty and simple dish, make your own mayonnaise or buy a bottle in the supermarket and add some ground Chipotle and garlic. The result is a slightly spicy sweet mayonnaise that tastes delicious on a burger, fries or as a dip!
Preparation
– Place the dried chillies in a food processor and grind them until they have the coarse texture you prefer, flakes or powder.
– Rehydrate by soaking them in hot water for about 15 minutes, then chop as you prefer.
– Fry the dried chillies in a dry frying pan on medium heat for about 2 minutes. This will release the essential oils and give them more flavour.
Storage / shelf life
Can be stored in an airtight container for a very long time, but for optimal taste and spiciness, we advise no longer than one year. Avoid exposure to light, (sun)light will discolour the peppers and the taste will decrease.
