Description

Huacatay, also known as Peruvian black mint or Tagetes minuta, is an aromatic herb widely used in Peruvian cuisine. It has a distinctive flavour and is a fresh blend of mint, basil, tarragon and lime. The Huacatay is indispensable in the Peruvian paste; Aji de Huacatay, a spicy and flavoursome chilli paste. The paste is made with a mix of Aji Amarillo chilli peppers and Huacatay leaves. The Huacatay is also widely used to flavour meat, potatoes, soups and stews.

The leaves can also be easily made into tea, which helps against colds and flu. In South America, for example, there is a popular cough syrup made from dried Huacatay. Draw tea from it and add liqueur and honey or sugar and you have a natural cough syrup! As if this was not enough, it is also used in cocktails and as a base oil for perfumes and pharmaceuticals.

It is best to store the fresh herbs in the fridge. Wash the leaves with cold water and wrap them in a few sheets of kitchen paper or a sandwich bag. Keep this in the vegetable drawer of your fridge. This way the herbs stay good the longest, about 1 week. It is also possible to freeze or dry the leaves. Click here for more information.
